Chef Roux took two of the kitchen's most questionable pantry staples and — through sheer improvised stubbornness — coaxed a silky mineral-rich broth and pressed it into plump pan-fried dumplings with a smoky sealed crust. The filling is mysteriously dense and surprisingly satisfying.
