Garlic Snail Smash Burger

Chef Roux improvised by pulling apart the Bookger and piling it high with golden-sautéed garlic snail, roasted garlic aioli, and crispy fries tucked right inside the bun. The whole stack is held together with a skewer and served open-faced for dramatic effect.
