Frost Lichen Moonmilk Panna Cotta

Chef Roux improvised a silky, pearlescent panna cotta by steeping frost lichen in warm moonmilk until it set into a gently glowing, cool-to-the-touch custard. A dusting of crushed lichen flakes crowns the top, adding a satisfying frosty crunch to each spoonful.
