Crimson Cherry Pocket Puffs

Chef Roux pinched fresh dough around plump, juicy cherries on a whim and baked them until the pastry puffed into golden little pillows. Each bite bursts with warm, sweet cherry filling wrapped in a chewy-crisp shell. The twine bow was not edible, but it did inspire the presentation.
