Chef Roux impulsively shaved the Founder's Potato paper-thin, tossed the ribbons in a generous glug of Olive Oil, and flash-fried them until they curled into golden, shattering crisps. A pinch of seasoning salt and a last-second drizzle of oil finished the batch straight from the pan.
